The best crawfish bread I’ve eaten was from “The Pie Man” in New Orleans. He’s a well-known caterer that had the best gumbo, crawfish bread and desserts that was sold out of coolers off the back of his truck…..LOL yes you heard me. We use to run to this man’s truck for lunch fighting to get the popular Cajun dishes before they were sold out. Ok, he didn’t have one of those popular food trucks you see now, he actually had a pick up truck…..yes a pickup truck. I laugh every time I think about some of the things we did for good food.
Well, I never could figure out what was in his crawfish bread and I never was taught how to make it. I decided to try out some recipes online to see if anything comes close, but nothing does. I did try the Food Network version and it’s pretty tasty, but I made a few adjustments. You can see the recipe here.
